Is there an easy way to code an HTML form to inject tags into a text-field at the click of a on?

Simple if you understand it and know what you are doing - same with any coding. I doubt you can just use HTML to do that. It would require another form of coding. Best option would be to google for tutorials on making forms, text fields and ons.
